Simplicity is Sweet

"If a cake has my name on it, it has to be great.” If you haven’t had cakes from Cakes by Darcy, then you’re totally missing out on the sweetest, creamiest, freshest cake in metro Atlanta.

Let’s be clear. This isn’t the kind of cake you freeze and eat later. Nor is it the kind of cake you foil and refrigerate. Packed full of fresh, homemade ingredients and icing that melts in your mouth — you will happily eat the entire cake in one sitting.

With relatively basic cake flavors like French Vanilla, Almond Butter, Devil’s Food, Red Velvet and Carrot, Darcy has a knack for taking the ordinary and turning it into the extraordinary, with cake filling options like raspberry, Oreo, coconut or Bavarian cream, just to name of few.  And as if that wasn’t enough to tempt your taste buds, Cakes by Darcy also offers other desserts in all shapes and sizes, including cupcakes, pies, bars, petit fours and their famous éclairs (generously topped with rich fudge icing).

“We really focus on the quality and taste of our cakes,” says Darcy, owner and founder of Cakes by Darcy (who prefers to be known by the sole name of her namesake brand). “Of course the presentation is important. But if you don’t want to eat it — what’s the point in buying it?”

Darcy originally studied graphic design and commercial art in Iowa, while working at a local bakery on the side. After marriage, two kids and a hands-on experience at a cake bakery in Chicago, Darcy decided to open Cakes by Darcy after relocating to Roswell, Georgia. “I always said to myself ‘One day I’ll open my own place’,” said Darcy. “After marriage and kids, I finally asked myself ‘When is that? When will that one day come?’”

That day came in October 2004, when Darcy first opened her doors on Crossville Road, and customers have been rolling in ever since.

What Darcy loves most about baking cakes, other than decorating them, is presenting them to the customer — especially wedding cakes. In fact, wedding cakes are one of Darcy’s most favorite cakes to create — “There’s a lot of care and detail in every aspect of the cake,” Darcy explains. And she not only takes care in baking and designing the cake, but also personally delivers every wedding cake to the venue to meet the bride-to-be.

Of course, we had to ask Darcy about the latest trends for “southern” wedding cakes: “Shabby-chic, burlap and lace,” she replied. “We typically design our cakes around the color palette of the season’s most popular fashion line.” (Though Darcy’s favorites are the ones donned in rhinestones, silver balls and shiny ribbon.)
